Stuffed Capsicum

This is another one of those foods that look like they take a lot of time and effort to make but in truth, are easy to prepare & #healthy to eat.

About the recipe: This recipe will give you better taste when cooked in tandoor. You can also enjoy this recipe with your barbeque grill.

Ingredients:

  1. 10-12 Capsicum
  2. 3 medium Potatoes, boiled and mashed
  3. 2 cup Paneer, grated
  4. 2 cup Onions, chopped
  5. 2 teaspoon Cumin powder
  6. 1 teaspoon Red chili powder
  7. 2 tablespoon Olive oil
  8. ½ cup Lemon juice
  9. ½ teaspoon Ginger, chopped)
  10. Salt to taste

Recipe:

Remove the seeds from the capsicum and cut out the top portion. Similarly slice off thinly from the bottom so that the capsicums stand steady when placed on a baking tray.

Take a bowl and add mashed potatoes, paneer, onions, cumin powder, ginger, lemon juice, salt, red chili powder. Mix it well. Now add olive oil and again mix well.

Stuff the capsicum with the paneer mixture. Take an aluminium foil in square shape and cover the capsicum top with the foil. If you have cooked it in tandoor then place it in pre-heat tandoor for 3-5 minutes.

If you are cooking in microwave then preheat oven to 225º C. Bake capsicums at 225 ºC for fifteen minutes. Serve immediately to enjoy the #healthy stuffed capsicum.

Do’s: You may replace the paneer with cottage cheese.
