Rassa-e-Mutton

Ingredients‬‬:

  1. 300 gms mutton pieces
  2. 1 cup red onion, finely chopped
  3. 2 tbsp ginger-garlic paste
  4. 1 tbsp red chili powder
  5. ½ tbsp turmeric powder
  6. ½ tbsp coriander powder
  7. 1 tsp garam masala powder
  8. 2-3 bay leaves
  9. 2 big and black cardamoms
  10. ½ inch stick of cinnamon
  11. 3-4 cloves
  12. 1 tbsp cumin seeds
  13. 5-6 black peppercorns
  14. 1-2 star anise
  15. ½ inch javitri
  16. ½ tsp nutmeg powder
  17. ½ cup raw papaya, cut in small cubes
  18. 1 tbsp pure ghee
  19. Salt to taste
  20. Oil for frying (Mustard oil)

Recipe:

First clean the mutton and pat dry. Heat the oil in a non-stick pan and add all whole spices. When crackle the whole spices, add onions and sauté for 2-3 minutes till onion become golden brown. Add ginger garlic paste, red chili powder, coriander powder, turmeric powder, nutmeg powder and sauté for 1-2 minutes. Add mutton, papaya pieces and sauté for 5-7 minutes. Add salt and again saute on low flame till the oil starts separating. Now pour the entire thing in a pressure cooker and add garam masala, ghee and 1-2 cup of water and cover with lid. Cook it up to 4-5 whistles. Now check the mutton become tender. If it is become soft that means it’s full cooked. Serve hot with plain rice or roti.

Do’s: If you don’t count calories and eat with love and taste than add one spoon of pure cow ghee before serving. Its work tremendous. Your dish becomes two times tastier. Raw papaya cubes added for tendering. If raw papaya is not available you may replace it with curd or yogurt.
