Maal Pua

Ingredients:

  1. 2 cups, refined flour (Maida)
  2. 2 cups, sugar
  3. 3 ¼ cup, milk
  4. 1 tablespoon, curd
  5. ¼ teaspoon, Green cardamom powder
  6. 5-7 saffron, threads
  7. 3 pistas
  8. 3 almonds
  9. 2 to 3 drops, gulab or kewra essence
  10. 1 cup, water
  11. Desi Ghee or refined oil for frying

Recipe:

In a heavy bottomed pan bring milk to boil on medium flame. Stir continuously till milk is transformed into condensed milk (rabri) and 1/3rd in volume.

Once done set the milk aside for cooling.

Dissolve saffron in a teaspoon of hot milk and keep it aside.

In another hot pan mix water with sugar to make sugar syrup. Let the syrup be of one string consistency. Mix kewra and kesar syrup in it and keep a side.

In a bowl add refined flour, curd, rabri, elaichi powder, two teaspoon sugar syrup and make a mixture of thick batter (pouring consistency). Leave it for 2 hours.

Heat ghee in a pan, and spread the batter on it to circular form to make small pancakes.

Fry on both sides till golden brown in colour. Dip all the puas in the syrup till they fully soaked.

Take out puas from the syrup and serve with chopped pista, and almond.
