Jackfruit / Kathal Dry

Ingredients:

  1. 500 gms raw Jackfruit cubes
  2. ½ tsp turmeric powder
  3. ½ tsp ginger, finely chopped
  4. 1 tsp garlic, finely chopped
  5. 1 tbsp yogurt, whisked
  6. 1 onion, grated
  7. 4 green cardamoms
  8. 1 small cinnamon stick
  9. 3 cloves
  10. ¾ cup tomato finely chopped
  11. 1 tbsp coriander powder
  12. 2 tbsp cumin powder
  13. 1tsp garam masala
  14. 1 tbsp chopped coriander leaves
  15. 1 tsp red chili powder
  16. 2tbsp cashew nut paste
  17. 4-5 tbsp oil
  18. Salt to taste

Recipe:

Boil raw jackfruit for five to seven minutes till it become little softer. Keep all jackfruit pieces on the kitchen tissue paper to let water get absorbed. Heat oil in a pan and stir fry all jackfruit pieces on a medium flame. Add pinch of salt and red chili powder in it. Now, jackfruit pieces become light golden brown. Keep jackfruit pieces in a plate and keep it a side. Heat oil in pan and add cardamom, cinnamon stick and cloves. When cracked sound started coming then add chopped garlic and ginger into it. Sauté for few seconds and add onion in it. Sauté till onion become light brown. If it becomes hard, sprinkle some water over it. Add chopped tomato and again sauté it. Then add turmeric powder, coriander powder, cumin powder, red chili powder and yogurt mix well. Sauté for another five to eight minutes. Add cashew nut paste and sauté for one to two minutes more. Add salt and sauté for another minute. Add little water, garam masala powder and coriander leaves. Bring it to a boil. Add jackfruit pieces and mix well. Simmer for few minutes. Keep it little dry. Serve hot with roti or naan. If you like curry leaves too much then take a tadka pan and heat it. Add clarified butter and add curry leaves. When curry leaves becomes crunchy, put over the jackfruit pieces.
